Semolina pasta
There are two factors that make white, refined grains unhealthy. One is the lack of natural, absorbable nutrients. The other is that, because the grain is so refined, your body converts it to glucose and absorbs it too quickly, which overloads your body with sugars.
While semolina pasta is made from refined durum wheat, durum wheat is much harder than common wheat, and even though refined, digests slowly. So semolina doesn't have all the nutrients that a whole grain would have, but it digests slowly enough that it doesn't hit your body with an intense load of sugars. It's not a particularly nutritious food, but neither is it detrimental or negative to your body.
54. (Jesus:) If, when you serve semolina pasta, you complement it with other sources of nutrients (like good vegetables), it's not bad to eat, and won't hurt your health. (ML3634)

YAY!!! - This was a relief to read. - I have such a trial with brown pasta. :(

Yikes! I remember being served portions of semolina with a blob of jam on it at school. It was univerasally hated! The other bad one was tapioca. We called it "frog-spawn" 'cos that's what it looked like.
I didn't realise people actually liked it!

I was talking about what they use to make pasta. Pasta di semola di grano duro. - Believe it or not, that's "semolina".

I know I sighed the same for releif! Pasta -my greatest love in the food wine. Goes with all my favorites too, like full-bodied, strong red wines, garlic bread, parmesan, etc. etc.

Ah yes, I basically love everything Italian! - And the food is healthy, I'm sure of it. :D
